While this takes a little effort to put together, it’s really quite simple: Veggies, broth and spices.
Avocado Toast (Guac version)
I know, I know. Very trendy. But I happen to like avocado toast, so here is a simple take on it.
Tomato Soup!
We love some good tomato soup and it turns out to be easy to make. Four ingredients and minimal prep.
Butternut Squash Enchiladas
This is a great way to eat healthier with something that tastes great. Don’t let the word “squash” turn you away. These are pretty easy to make and did I mention tasty?
I know, I know: Trendy.
Or at least it was when we wrote this article!
Ingredients (the Basics)
- ½ Avocado
- 4T minced onion
- 2-3T Cashew sour cream
- or substitute 1-2T Vegenaise
- 1.2t Lemon juice
- Salt & Pepper to taste
- 2 slices toasted bread
Instructions
- Mash half an avocado in a bowl (I use a fork)
- Stir in the onion, Cashew sour cream, lemon juice and salt
- Spoon half the mixture on each slice of bread
- Grind some fresh black pepper on top
If you already have the Cashew sour cream made up, this barely takes longer to put together than it does to actually toast the bread! If you don’t have Cashew sour cream on hand, you can use real sour cream (obviously scratching the vegan label) or use can use Vegenaise.
Simple Version
Use the instructions above except omit everything except the avocado and cashew sour creat (or Vegenaise). And maybe the salt and pepper. This is fast to prepare.
Very Simple Version
Want something faster still? Quarter the avocado and then slice it thinly. Butter the toast and arrange the avocado slices on it. That makes it vegetarian but not vegan, of course, but it is very fast to prepare.
Less Simple Version
If you have a little more time, try adding 1 teaspoon minced garlic. You can also sprinkle Chipotle chili powder on top for some extra spice. Or, for a smoky flavor, dust with smoked paprika.
Ingestion Suggestions
We sometimes lay a fried egg (over easy) on top of the avocado toast. If you;re good with kitchen tools, you can drain the yolk onto the surface first. That way the yolk doesn’t squirt out when you bite into it!
